Once automated systems take over repetitive tasks such as food delivery and plate clearing, staff no longer need to focus on turning tables as quickly as possible. Instead, they can devote more attention to refined service and cultural training. For example, the brand’s signature tableside shrimp-peeling service is not even built into a rigid SOP.
